Paladins can train swords, two-handed swords, axes, two-handed axes, maces, two-handed maces, polearms and shields (polearms from level 20). Each step below is the best weapon you can equip and get by that level, and the slot only changes when something beats what you already hold. Pick a setup and your faction; quest rewards follow the quest's side.

A quest reward counts from two levels below the quest's level, a dungeon drop from the dungeon's lowest level, and crafted and vendor weapons from their required level. World drops are listed only as alternatives, since nobody can count on one. Melee and ranged weapons are ranked by damage per second; caster weapons by spell power plus Intellect, Spirit and Stamina; shields by armor. Items and quests are from the client build 1.60.1.70707; vendor stock is Classic's; raid gear and legendaries are left out.
